Ingredients

Ingredients

  • 1-2 lb fresh green beans, trimmed
  • 2 tbsp avocado oil
  • 8-10 garlic cloves
  • 3 tbsp sesame oil (for glaze)
  • 1/4 cups soy sauce or tamari
  • 2 tbsp sugar or honey
  • 2 lemons, zested and juiced
  • salt
  • sesame seeds or chili flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the green beans and cook 5–7 minutes until bright green and crisp. Drain and immediately transfer to ice water.
  2. Process the garlic cloves with the avocado oil until spoon‑able.
  3. Heat a wide skillet or wok over high heat and coat the bottom with a thin layer of oil.
  4. Add the green beans in a single layer and let sit undisturbed 1–2 minutes until blistered. Toss and repeat once more.
  5. Add the processed garlic directly to the pan and cook, tossing for 1–2 minutes until fragrant.
  6. Remove the green beans to a serving bowl.
  7. In the same pan, add soy sauce, sugar (or honey), and sesame oil. Toss quickly until glossy and the sugar has melted.
  8. Pour the glaze over the green beans, add lemon zest and juice, and season generously with salt to taste. Sprinkle optional sesame seeds or chili flakes, then serve immediately.
