- 1 pound ground turkey
- 1 medium zucchini
- 1 small onion
- 1/4 cup sundried tomatoes
- 2 tablespoons fresh mint
- 2 tablespoons fresh parsley
- 2 garlic cloves
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Grate 1 medium zucchini and squeeze out excess moisture using a clean kitchen towel.
- Finely chop 1 small onion, 1/4 cup sundried tomatoes, 2 tablespoons fresh mint, 2 tablespoons fresh parsley, and 2 garlic cloves.
- In a large bowl, combine 1 pound ground turkey, shredded zucchini, chopped onion, sundried tomatoes, mint, parsley, garlic, 1 beaten egg,m, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon cumin, 1/2 teaspoon chili powder, and 1/2 teaspoon paprika.
- Mix ingredients gently until just combined, avoiding overworking the mixture.
- Form into 4 equal patties, about 1/2-inch thick.
- Place patties on the prepared baking sheet.
- Bake for 20-25 minutes, flipping halfway through, until internal temperature reaches 165°F (74°C).
- Let burgers rest for 5 minutes before serving.
