Cheesy Ham And Potato Skillet

Instructions
- Heat butter in a large skillet over medium heat until melted.
- Add diced potatoes and cook for 8 minutes, stirring occasionally until they begin to soften.
- Stir in chopped onion and bell pepper, cooking for 5 minutes until vegetables are tender.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in milk and stir to combine, then add diced deli ham.
- Season with salt and pepper, cover the skillet, and simmer for 10 minutes until potatoes are fully tender.
- Sprinkle shredded cheddar cheese evenly over the top and cover until melted, about 2 minutes.
- Garnish with chopped parsley if desired and serve hot.
Notes
For extra flavor, add a pinch of paprika with the seasonings. Leftovers reheat well in the microwave.
