A spicy Cajun‑inspired chicken dish cooked low and slow in a tomato sauce, served over rice.

- 1 tsp salt
- 4 bay leaves
- 1 tsp file powder
- 1 tsp oregano
- 1 tsp dried onion
- 1 tsp black pepper
- 1 tsp cayenne pepper
- 1 tsp garlic powder
- 1 tsp ground thyme
- 2 lb boneless skinless chicken thighs
- 2 tbsp olive oil
- 1 tsp red pepper flakes
- 3 tbsp minced garlic
- 2 15-ounce cans tomato sauce
- hot cooked white rice
Instructions
- Add red pepper flakes, olive oil, and garlic in a large saucepan and simmer for 5 minutes.
- Combine the remaining ingredients (except the rice), heat until hot, then add to the crockpot with the chicken and cook on low for 6 hours.
- Remove the bay leaves and serve with hot cooked white rice and garlic bread.
