A spicy Cajun‑inspired chicken dish cooked low and slow in a tomato sauce, served over rice.

  • 1 tsp salt
  • 4 bay leaves
  • 1 tsp file powder
  • 1 tsp oregano
  • 1 tsp dried onion
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp ground thyme
  • 2 lb boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tsp red pepper flakes
  • 3 tbsp minced garlic
  • 2 15-ounce cans tomato sauce
  • hot cooked white rice

Instructions

  1. Add red pepper flakes, olive oil, and garlic in a large saucepan and simmer for 5 minutes.
  2. Combine the remaining ingredients (except the rice), heat until hot, then add to the crockpot with the chicken and cook on low for 6 hours.
  3. Remove the bay leaves and serve with hot cooked white rice and garlic bread.
