Scrambled Banana Oat Breakfast Bowl with Berry Chia Jam

  • 1/2 cup rolled oats
  • 1/2 medium ripe banana
  • 1/2 tbsp coconut oil
  • 1/2 tsp ground cinnamon
  • 1 tbsp ground flax seeds
  • 1/4 tsp salt
  • 1/2 cup frozen mixed berries
  • 1 tbsp chia seeds
  • 1/2 tbsp maple syrup
  • 1 cup plain greek yogurt
  • 1 tbsp natural peanut butter

Instructions

  1. In a small saucepan over medium heat, combine 1/2 cup frozen berries and a dash of maple syrup. Cook for 5 minutes, stirring occasionally, until the berries soften and release their juices. Stir in 1 tablespoon chia seeds and simmer for another 3-5 minutes until the mixture thickens into a jam-like consistency. Remove from heat and set aside.
  2. In a frying pan over medium heat, melt 1/2 tablespoon coconut oil. Add 1/2 cup rolled oats, 1/2 mashed ripe banana, 1/2 teaspoon ground cinnamon, 1 tablespoon ground flax seeds, and 1/4 teaspoon salt. Stir frequently for 5-7 minutes, cooking until the oats are soft and slightly scrambled, resembling a porridge texture. Remove from heat.
  3. Divide 1 cup Greek yogurt into one bowl. Spoon the scrambled banana oats over the yogurt in the bowl. Add a generous dollop of berry chia jam on top.
  4. In a small microwave-safe bowl, warm 1 tablespoon peanut butter for 10-15 seconds until pourable. Drizzle the peanut butter over the bowl and finish with a light sprinkle of additional ground cinnamon. Serve immediately.
