High Protein Street Corn Taco Sweet Potatoes

These flavorful stuffed sweet potatoes combine savory seasoned ground meat with a creamy, zesty street corn topping for a perfect easy dinner or meal prep.

  • 4 count medium sweet potatoes
  • 1.5 lb ground beef or turkey
  • 3 cups corn (fresh, canned, or frozen)
  • 0.5 cups plain greek yogurt
  • 2 tbsp mayo
  • 1 count lime juice
  • 1 count diced avocado
  • 0.25 cups cotija cheese
  • 1 handful fresh cilantro
  • 1 packet taco seasoning
  • to taste null oil, salt, pepper, garlic powder, onion powder, chili powder

Instructions

  1. Preheat your oven to 375°F.
  2. Slice the sweet potatoes in half lengthwise.
  3. Drizzle the sweet potatoes with oil and season with salt, pepper, garlic powder, and onion powder.
  4. Place the sweet potatoes face down on a baking sheet and bake for 45–60 minutes until tender.
  5. Brown the ground beef or turkey in a skillet over medium-high heat.
  6. Add taco seasoning to the meat and cook according to package instructions.
  7. Combine the corn, Greek yogurt, mayo, lime juice, cotija cheese, cilantro, and a pinch of chili powder, garlic powder, and salt in a bowl to make the street corn mixture.
  8. Mash the center of the baked sweet potatoes slightly.
  9. Top the potatoes with the seasoned taco meat.
  10. Add a generous scoop of the street corn mixture over the meat.
  11. Garnish with extra cotija, fresh cilantro, diced avocado, and a fresh squeeze of lime before serving.

Notes

Use a high-quality taco seasoning to enhance the flavor of the meat. If you are meal prepping, store the street corn mixture separately from the potatoes and meat to maintain the best texture.
