Middle Eastern Red Cabbage Slaw

This vibrant slaw pairs crisp shredded red cabbage with fresh mint, parsley, and scallions in a tangy sumac-lemon dressing that brightens every bite and gets even better after a short chill.

  • 1 small red cabbage
  • 4 scallions
  • 1/4 cups fresh mint leaves
  • 1/4 cups fresh parsley leaves
  • 1/2 red onion
  • 2 garlic cloves
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp sumac
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder

Instructions

  1. Shred the small red cabbage as thinly as possible.
  2. Thinly slice the scallions and red onion.
  3. Finely chop the mint and parsley leaves.
  4. Mince the garlic cloves.
  5. Add the olive oil, lemon juice, sumac, salt, pepper, and garlic powder to the veggies
  6. Toss everything vigorously until evenly coated.
  7. Cover and refrigerate for at least 30 minutes to let the flavors meld before serving.
