Middle Eastern Red Cabbage Slaw
This vibrant slaw pairs crisp shredded red cabbage with fresh mint, parsley, and scallions in a tangy sumac-lemon dressing that brightens every bite and gets even better after a short chill.

- 1 small red cabbage
- 4 scallions
- 1/4 cups fresh mint leaves
- 1/4 cups fresh parsley leaves
- 1/2 red onion
- 2 garlic cloves
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp sumac
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
Instructions
- Shred the small red cabbage as thinly as possible.
- Thinly slice the scallions and red onion.
- Finely chop the mint and parsley leaves.
- Mince the garlic cloves.
- Add the olive oil, lemon juice, sumac, salt, pepper, and garlic powder to the veggies
- Toss everything vigorously until evenly coated.
- Cover and refrigerate for at least 30 minutes to let the flavors meld before serving.
