Veggie Tagine

A flavorful Moroccan-inspired vegetable tagine packed with goodness

Ingredients

Ingredients

  • 2 tbsp olive oil
  • 1 large onion
  • 3 garlic cloves
  • 1 tbsp fresh ginger
  • 1 tbsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tbsp tomato paste
  • 3 small squash
  • 1 medium eggplany
  • 400 g chickpeas
  • 2 lemons
  • 20 green olives
  • 400 g chopped tomatoes
  • 300 ml vegetable stock
  • rice

Instructions

  1. Heat the olive oil in a large pot, fry the onion for 5 mins then add the garlic cloves, ginger, tomato paste and spices, cook for 1 minute until fragrant.
  2. Stir in the veg and coat in spices. Then add the chickpeas, tinned tomatoes, veg stock, lemon, & olives
  3. Bring to a gentle boil, then reduce heat and simmer uncovered for 40 mins, stirring occasionally, until veg are soft and sauce thickens.
  4. While the tagine simmers, add 300g rice to a bowl, pour over 400ml of veg stock, cover, and leave for 10 minutes.
