Veggie Tagine
A flavorful Moroccan-inspired vegetable tagine packed with goodness

- 2 tbsp olive oil
- 1 large onion
- 3 garlic cloves
- 1 tbsp fresh ginger
- 1 tbsp ground cumin
- 1 tsp ground cinnamon
- 1 tbsp tomato paste
- 3 small squash
- 1 medium eggplany
- 400 g chickpeas
- 2 lemons
- 20 green olives
- 400 g chopped tomatoes
- 300 ml vegetable stock
- rice
Instructions
- Heat the olive oil in a large pot, fry the onion for 5 mins then add the garlic cloves, ginger, tomato paste and spices, cook for 1 minute until fragrant.
- Stir in the veg and coat in spices. Then add the chickpeas, tinned tomatoes, veg stock, lemon, & olives
- Bring to a gentle boil, then reduce heat and simmer uncovered for 40 mins, stirring occasionally, until veg are soft and sauce thickens.
- While the tagine simmers, add 300g rice to a bowl, pour over 400ml of veg stock, cover, and leave for 10 minutes.
