A light and elegant Italian-inspired side where fresh spinach is quickly sautéed with fragrant garlic and bright lemon zest, making it a perfect romantic accompaniment.

  • 1 lb fresh spinach
  • 3 cloves garlic
  • 1 whole (for zest and juice) lemon
  • 2 tbsp olive oil
  • 1/4 cup (grated) parmesan cheese
  • to taste salt
  • to taste black pepper
  • 1/4 tsp (optional) red pepper flakes

Instructions

  1. Mince 3 garlic cloves finely.
  2. Zest and juice 1 lemon, reserving both.
  3. Heat 2 tablespoons olive oil in a large skillet over medium heat.
  4. Add the minced garlic and sauté for 1 minute until fragrant, stirring constantly to avoid burning.
  5. Add 1 pound fresh spinach in batches, stirring until it begins to wilt.
  6. Squeeze in the juice of 1 lemon and add the lemon zest.
  7. Season with salt, black pepper, and a pinch of red pepper flakes to taste.
  8. Cook for 2-3 minutes until the spinach is fully wilted and tender.
  9. Remove from heat and sprinkle with 1/4 cup grated Parmesan cheese.
  10. Serve immediately as a vibrant side dish.
