Tender ground meat meatballs flavored with fresh herbs and Parmesan cheese, ideal for weekly meal prep to enjoy in multiple dishes like pasta, subs, or salads.

  • 1 lb ground beef or turkey
  • 1/2 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh basil, chopped
  • 2 garlic cloves, minced
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground meat, breadcrumbs, grated Parmesan, chopped fresh herbs (parsley, basil, oregano), minced garlic, egg, salt, and pepper. Mix gently until just combined.
  3. Form mixture into 1-inch meatballs and place on the baking sheet.
  4. Bake for 20-25 minutes, or until cooked through and browned. Internal temperature should reach 165°F (74°C).
  5. Cool and portion for meal prep. Use in pasta, sandwiches, or grain bowls throughout the week.
