Herby Parmesan Meatballs
Tender ground meat meatballs flavored with fresh herbs and Parmesan cheese, ideal for weekly meal prep to enjoy in multiple dishes like pasta, subs, or salads.

- 1 lb ground beef or turkey
- 1/2 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh basil, chopped
- 2 garlic cloves, minced
- 1 egg
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground meat, breadcrumbs, grated Parmesan, chopped fresh herbs (parsley, basil, oregano), minced garlic, egg, salt, and pepper. Mix gently until just combined.
- Form mixture into 1-inch meatballs and place on the baking sheet.
- Bake for 20-25 minutes, or until cooked through and browned. Internal temperature should reach 165°F (74°C).
- Cool and portion for meal prep. Use in pasta, sandwiches, or grain bowls throughout the week.
