Honey Bourbon Blackberry Glaze For Pork

A glossy, fruit-forward glaze that blends honey, bourbon, and blackberry balsamic vinegar to finish pork without brown sugar.

  • 1/2 cup honey
  • 1/3 cup bourbon
  • 1/4 cup blackberry balsamic vinegar
  • 1 tbsp soy sauce
  • 1 tsp dijon mustard
  • 2 tsp garlic, minced
  • 1 tsp ginger, fresh grated
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp cornstarch

Instructions

  1. Heat a small saucepan over medium heat and add a drizzle of oil.
  2. Sauté minced garlic and grated ginger until fragrant, about 30 seconds.
  3. Add bourbon; simmer until reduced by half, about 4–6 minutes.
  4. Whisk in honey, blackberry balsamic vinegar, soy sauce, and Dijon mustard; bring to a gentle simmer.
  5. Season with salt and pepper; adjust to taste.
  6. Prepare a cornstarch slurry by whisking 1 teaspoon cornstarch with 1 tablespoon water in a small bowl.
  7. Stir slurry into the sauce and simmer until thickened, about 1–2 minutes.
  8. Remove from heat and keep warm.
  9. Brush glaze over pork during the last minutes of cooking, or serve on the side.
  10. Optional: finish with a splash more bourbon for extra gloss just before serving.
