Honey Bourbon Blackberry Glaze For Pork
A glossy, fruit-forward glaze that blends honey, bourbon, and blackberry balsamic vinegar to finish pork without brown sugar.

- 1/2 cup honey
- 1/3 cup bourbon
- 1/4 cup blackberry balsamic vinegar
- 1 tbsp soy sauce
- 1 tsp dijon mustard
- 2 tsp garlic, minced
- 1 tsp ginger, fresh grated
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tsp cornstarch
Instructions
- Heat a small saucepan over medium heat and add a drizzle of oil.
- Sauté minced garlic and grated ginger until fragrant, about 30 seconds.
- Add bourbon; simmer until reduced by half, about 4–6 minutes.
- Whisk in honey, blackberry balsamic vinegar, soy sauce, and Dijon mustard; bring to a gentle simmer.
- Season with salt and pepper; adjust to taste.
- Prepare a cornstarch slurry by whisking 1 teaspoon cornstarch with 1 tablespoon water in a small bowl.
- Stir slurry into the sauce and simmer until thickened, about 1–2 minutes.
- Remove from heat and keep warm.
- Brush glaze over pork during the last minutes of cooking, or serve on the side.
- Optional: finish with a splash more bourbon for extra gloss just before serving.
