Middle eastern beef, turkey, and rice

This hearty filling features ground turkey and beef mixed with fragrant rice and Lebanese-inspired spices. Ideal for stuffing vegetables, wraps, or enjoying as a main dish.

  • 2 tbsp olive oil
  • 2 count large onions
  • 1.5 garlic heads
  • 2 lb ground turkey
  • 1 1/4 lb ground beef
  • 1.5 cup white long-grain rice
  • 1/3 Cup tomato paste
  • 2 tbsp ground cinnamon
  • 2 tbsp allspice
  • 2 tbsp ground cumin
  • 3/4 tsp red chili flakes
  • 3/4 cup fresh parsley
  • 3/4 cup fresh mint
  • salt
  • black pepper
  • 2 cup chicken stock

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Wash and soak rice for 20 minutes
  3. Seer ground beef and turkey until cooked mostly through then remove.
  4. Dice large onions. Add to the skillet and sauté until translucent. Add minced garlic after a few minutes
  5. Add ground turkey and ground beef to the skillet. Cook, stirring often, until the meat is browned and crumbly. Season lightly with salt and pepper.
  6. Stir in the drained rice, tomato paste, ground cinnamon, allspice, ground cumin, and red chili flakes. Mix well so the rice is evenly coated with the spices and tomato paste.
  7. Add chicken broth in batches, keep adding when it is absorbed. Repeat with enough broth/water until rice is tender.
  8. Remove from heat and fold in chopped parsley and chopped mint. Adjust seasoning if needed.
