Crispy potato pancakes made easy by baking in the oven instead of frying on the stovetop, ensuring no mess and evenly hot results every time.

  • 4 medium russet potatoes
  • 1 medium onion
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • 1 tsp baking powder
  • 3/4 tsp salt
  • 1/4 tsp black pepper, freshly ground
  • 2 tbsp fresh chives
  • 1/4 cup vegetable oil

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Grate 4 russet potatoes and 1 medium onion using a food processor.
  3. Place the grated mixture in a clean kitchen towel and squeeze out as much liquid as possible over a sink.
  4. In a large bowl, combine the drained potato-onion mixture with 2 beaten eggs, 1/3 cup all-purpose flour, 1 teaspoon baking powder, 3/4 teaspoon salt, 1/4 teaspoon freshly ground black pepper, and 2 tablespoons finely chopped fresh chives for added flavor.
  5. Mix everything well until evenly combined.
  6. Drizzle 1/4 cup vegetable oil onto the prepared baking sheet and spread it evenly.
  7. Form the mixture into 12-16 small pancakes (about 1/4 cup each) and place them on the oiled baking sheet, pressing down slightly to flatten.
  8. Bake for 20 minutes, then carefully flip each latke using a spatula.
  9. Bake for an additional 10-15 minutes, or until golden brown and crispy on both sides.
  10. Remove from the oven and serve hot with applesauce and sour cream on the side.
