Oven-Baked Homemade Latkes

- 1 medium onion

Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
- Grate 4 russet potatoes and 1 medium onion using a food processor.
- Place the grated mixture in a clean kitchen towel and squeeze out as much liquid as possible over a sink.
- In a large bowl, combine the drained potato-onion mixture with 2 beaten eggs, 1/3 cup all-purpose flour, 1 teaspoon baking powder, 3/4 teaspoon salt, 1/4 teaspoon freshly ground black pepper, and 2 tablespoons finely chopped fresh chives for added flavor.
- Mix everything well until evenly combined.
- Drizzle 1/4 cup vegetable oil onto the prepared baking sheet and spread it evenly.
- Form the mixture into 12-16 small pancakes (about 1/4 cup each) and place them on the oiled baking sheet, pressing down slightly to flatten.
- Bake for 20 minutes, then carefully flip each latke using a spatula.
- Bake for an additional 10-15 minutes, or until golden brown and crispy on both sides.
- Remove from the oven and serve hot with applesauce and sour cream on the side.
