Blackberry Cobbler (Samβs Version)
a lovely dessert for all berry lovers, not too sweet, with a hint of the south π«ππππ¨

- 1 cup self rising flour
- 1/2 cup sugar
- 2 1/2 cups blackberries
- 1 stick unsalted butter
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 cup milk of choice
Instructions
- Wash and pour 2 1/2 cups of blackberries into a bowl
- Pour 1/2 cup of sugar (I have also used 1/3 cup of sugar and I feel it tastes the same) into the bowl of blackberries.
- Gently mix the sugar into the blackberries until there is an even coating. Let the blackberries and sugar mixture sit for ~30 minutes. Long enough so that a blackberry syrup forms at the bottom.
- Preheat oven to 375 degrees F
- In a second bowl (not the blackberry bowl), combine 1 cup of self rising flour, 1 cup of milk (I used whole), 1 stick of melted butter, and 1 tsp of vanilla extract. Mix ingredients fully, but let the mixture stay lumpy. It should be more on the watery side with lumps.
- Lightly butter a 9x9 pan and pour the batter in, making sure to smooth out the lumps to form an even layer. This might seem like it will be too thin at this point, donβt worry, thatβs what self rising flour is for!
- At this point, your blackberries should be ready to pour. Pour your blackberry and sugar mixture into the batter in the 9x9 pan. Make sure the blackberries have their own spot and are not overlapping too much.
- Make sure all that syrup from the bottom of the blackberry bowl is drizzled on the blackberries before going into the oven!! Add your tsp of cinnamon on top.
- Bake for 30-35 minutes. Goal is to have the top golden brown with the edges peeling off pan slightly.
- Enjoy with some vanilla icecream if you want a full experience!!!
