These marinated pickled red onions are a tangy and flavorful addition to salads, tacos, and sandwiches. Simple to prepare and deliciously versatile, they add a pop of color and crunch to any dish.

  • 3 cups red onions
  • 1 cup apple cider vinegar
  • 1/2 cup water
  • 1 tbsp salt
  • 1 tbsp sugar
  • 1 tsp cumin seeds
  • 1 tsp whole peppercorns
  • 1/2 tsp chili flakes
  • 1 tsp coriander seeds
  • 1 leaf bay leaf
  • 1 tsp sumac

Instructions

  1. Fill a glass jar with thinly sliced red onions.
  2. Pour apple cider and water mixture over the onions, ensuring they are submerged but not too much liquid remains in the jar.
  3. Remove the liquid and pour it into a small saucepan.
  4. Add salt and sugar to the liquid and bring to a boil until dissolved.
  5. Once dissolved, pour the hot liquid back over the onions in the jar and seal it.
  6. Add cumin seeds, peppercorns, chili flakes, coriander seeds, bay leaf, and sumac to the jar, if desired.
  7. Allow the mixture to cool to room temperature before refrigerating.
  8. Refrigerate for at least 1 hour before using.
  9. The pickled onions can be stored in the refrigerator for a while
