Chewy Butter Mochi

- 160 g glutinous rice flour
- 60 g white sugar
- 200 ml whole milk
- 30 g unsalted butter
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Preheat oven to 350°F (175°C) and grease an 8x8-inch baking dish.
- In a large bowl, whisk together the glutinous rice flour, white sugar, and salt.
- In a separate bowl, whisk the room-temperature milk, egg, vanilla extract, and softened butter until smooth.
- Combine the wet and dry ingredients, stirring until a smooth batter forms.
- Pour the batter into the prepared baking dish and bake for 30-35 minutes, or until the top is golden and set.
- Let cool slightly before slicing and serving.
