Creamy Garlic-Infused Mashed Potatoes
These mashed potatoes build on the garlic already simmering with the potatoes for deep flavor, finished with butter and cream for a rich, velvety texture that elevates the simple start.

Instructions

- Drain the potatoes and garlic, reserving 1/4 cup of the cooking water.
- Return the potatoes and garlic to the pot over low heat for 1 minute to evaporate excess moisture.
- Add the butter and mash roughly with a potato masher.
- Pour in the heavy cream and reserved cooking water while mashing until smooth and creamy.
- Stir in the salt and black pepper, adjusting to taste.
- Whip vigorously with a wooden spoon for 30 seconds to incorporate air and lighten the texture.
- Serve immediately, garnished with chopped chives if desired.
Notes
Yukon Gold potatoes yield the creamiest results; reserve more starchy water if needed for consistency.
