CREAMY TRUFFLE & MUSHROOM PASTA

- 1 shallot
- 4 portobello mushrooms
- 1 garlic clove
- salt
- thyme
- butter
- 2 heaped tsp minced black truffle
- a pot double cream
- lots parmesan cheese
- pasta
- a little pasta water
Instructions
- Chop one shallot, four portobello mushrooms, and one garlic clove.
- In a pan, fry the shallot until softened.
- Add the mushrooms, season with salt, and cook until they release their water.
- Stir in thyme and butter, braise for a couple of minutes.
- Add the minced garlic and about two heaped teaspoons of minced black truffle; cook briefly.
- Pour in a pot of double cream and simmer for a couple of minutes until the sauce darkens slightly.
- Stir in lots of parmesan cheese.
- Add cooked pasta and a splash of pasta water; toss everything together for a couple of minutes.
- Serve immediately and enjoy.
