Everything Bagel Baked Salmon Quinoa Bowl

Bear salad comprised of quinoa, blueberries, creamy goat cheese, spinach, topped with salmon crusted with everything bagel seasoning and dressed with a simple oregano vinaigrette.

Ingredients

Ingredients

  • 2 salmon fillets
  • 2 tbsp everything bagel seasoning
  • 5 tbsp olive oil
  • 1 cups quinoa
  • 1 cups blueberries
  • 4 cups spinach
  • 4 oz goat cheese
  • 2 tbsp apple cider vinegar
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp dried oregano

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry and place them on the prepared sheet.
  3. Drizzle the salmon with olive oil and sprinkle evenly with everything bagel seasoning.
  4. Bake the salmon for 12 to 15 minutes until it flakes easily and reaches 145°F internally.
  5. Meanwhile, rinse the quinoa and cook it in salted water according to package directions until tender. Let cool once done.
  6. Whisk together the remaining olive oil, apple cider vinegar, salt, pepper, and oregano to make the dressing.
  7. In a large bowl, combine the cooked quinoa, spinach, and blueberries.
  8. Crumble the goat cheese over the quinoa mixture and toss gently with half the dressing.
  9. Divide the salad among bowls and top each with a salmon fillet.
  10. Drizzle the remaining dressing over the salmon and serve immediately.

Notes

Wild salmon works especially well here for its richer flavor and firmer texture.
