Kimchi Tuna Melt

- 1.25 cups chicken of the sea tuna, 25% less sodium, chunk light (canned tuna)
- 1/2 cups kimchi
- 2 tbsp green onion
- 2 tsp gojujang
- 1/2 tsp sesame oil
- 1/2 tbsp light mayo
- 1 tsp garlic powder
- 2-3 tbsp shredded mozzarella cheese
- 2-3 tbsp shredded parmesan cheese
- 2 cups sourdough bread
Instructions
- Drain the canned tuna and combine it in a bowl with kimchi, gojujang, sesame oil, light mayo, and garlic powder.
- Dice the green onions and add them to the bowl, mixing everything together.
- Place two slices of sourdough bread and sprinkle both mozzarella and parmesan cheese on top of one slice.
- In a pan, spray cooking oil and toast both slices of bread until one side is golden brown; cover with a lid to melt the cheese, then flip the plain slice and toast until golden brown.
- Top the cheese‑covered slice with the tuna mixture, then place the other toasted slice on top to form the sandwich. Enjoy!
