Bourbon Chicken

  • 2 lb chicken thighs
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • black pepper
  • 1/3 cups soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp ketchup
  • 1/2 cups apple juice
  • 1/4 cups water
  • 1 tbsp apple cider vinegar
  • 1/3 cups light brown sugar
  • 1 g grated ginger
  • 3 garlic cloves
  • 1 tbsp cornstarch dissolved in water

Instructions

  1. In a bowl, whisk together the soy sauce, hoisin, ketchup, apple juice, water, vinegar, brown sugar, ginger, and garlic. Set aside.
  2. Season the chicken thighs with garlic powder, onion powder, paprika, and black pepper, making sure to cover every part.
  3. Add the chicken to a skillet with a tablespoon of oil, allowing both sides to brown; it does not need to be cooked through at this point. Remove and let rest.
  4. Add the sauce to the pan and scrape up any fond. Let it reduce by half before adding in a cornstarch slurry.
  5. Return the chicken to the pan and let it all simmer until it reaches temperature.
