Pork chop apples and orzo - loosely followed the recipe
Pork Chops with Apples and Onions
Juicy pork chops seared and simmered with sweet apples, onions, and a savory pan sauce of apple cider and herbs.
Ingredients
Ingredients
- 4 boneless or bone-in pork chops
- salt and pepper
- olive oil
- 3 tbsp unsalted butter
- 1 yellow onion
- 3 fresh garlic
- 0.5 tsp fresh thyme leaves
- 0.5 tsp fresh rosemary
- 0.5 tbsp dijon mustard
- 0.5 cups chicken broth
- 0.5 cups apple cider
- 2 honeycrisp apples
Instructions
- Season pork chops with salt and pepper on both sides. Let them rest for 20 minutes.
- In a large skillet, heat olive oil over medium heat. Cook the pork for about 5 minutes per side, or until it's 150ºF in the center. Remove from pan and set aside.
- In the same skillet, melt 2 tablespoons of the butter over medium heat. Cook the onions, stirring occasionally until softened, about 12 to 15 minutes.
- Add the minced garlic, rosemary and thyme. Cook for another 1-2 minutes, stirring, until fragrant.
- Stir in the remaining 1 tablespoon of butter, dijon mustard, chicken broth, and the apple cider until incorporated. Scrape the brown bits with a wooden spoon. Bring to a simmer.
- Add the apples and simmer for about 5 to 7 minutes, until softened but still crisp. Season with more salt and pepper to taste.
- Return the pork chops to the pan, nesting them under the apples. Simmer for another 2-3 minutes over medium-low heat to finish cooking.
