A Passover tradition that slaps very much. This makes so much. I keep some in the freezer after and eat it like sorbet.
Charoset
Charoset is a traditional Passover dish, a sweet and crunchy mixture of fruits, nuts, and spices symbolizing the mortar used by ancient Jewish slaves in Egypt. This version features a delightful blend of nuts, dried fruits, and fresh produce for a flavorful, textured paste.

- 1 cup almonds
- 1 cup roasted, shelled pistachios
- 1 cup walnuts
- 1.5 cup black raisins
- 1.5 cup golden raisins
- 3 cup dates, pitted
- 2 tsp cinnamon
- 2 tsp ground cardamom
- 1 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1 large apple, peeled, quartered and cored
- 1 large pear, peeled, quartered and cored
- 2 bananas, peeled
- 2 to 3 tablespoons cider vinegar
- 1/2 to 1 cup pomegranate juice
- 1/2 to 1 cup sweet kosher wine
Instructions
- In a large food processor, combine the almonds, pistachios, walnuts, black raisins, golden raisins, dates, cinnamon, cardamom, ginger, and nutmeg. Pulse until the nuts are coarsely chopped.
- Add the apple, pear, and bananas, and pulse until coarsely chopped. Add 2 tablespoons cider vinegar, 1/2 cup pomegranate juice, and 1/2 cup sweet kosher wine. Pulse again, adding more vinegar, juice, or wine to taste as needed to form a coarse paste. Do not purée; the mixture should retain some crunch.
Notes
Adjust the vinegar, juice, and wine to balance sweetness and tartness to your preference. Store in an airtight container in the refrigerator for up to 5 days.
