Jasmine Shortbread Cookies
Delicate shortbread cookies flavored with fragrant jasmine tea leaves.

- 3 tbsp jasmine tea leaves
- 2 unsalted butter
- 1 tsp vanilla extract
- 2/3 cups powdered sugar
- 2 cups all-purpose flour
- 1/2 tsp salt
Instructions
- Grind the jasmine tea leaves in a spice grinder or mortar & pestle until a fine powder forms, leaving a few bits of leaf intact.
- Blend the butter and jasmine tea powder together with a rubber spatula and let the mixture sit at room temperature overnight.
- Preheat the oven to 350 °F (175 °C) and line a baking sheet with parchment paper.
- Combine the butter mixture with the vanilla extract and powdered sugar in a large bowl using a rubber spatula or a stand mixer fitted with a paddle attachment.
- Add the flour and salt, mixing until a soft dough forms.
- On a lightly floured surface, roll out the dough to a thickness of 1/4‑inch to 1/3‑inch (0.75 cm).
- Cut out cookies with a 2‑inch (5 cm) rectangle or round cutter, or any shape you prefer.
- Transfer the cookies to the prepared baking sheet and bake for 10‑14 minutes, until the edges just begin to turn golden brown.
