Jasmine Shortbread Cookies

Delicate shortbread cookies flavored with fragrant jasmine tea leaves.

  • 3 tbsp jasmine tea leaves
  • 2 unsalted butter
  • 1 tsp vanilla extract
  • 2/3 cups powdered sugar
  • 2 cups all-purpose flour
  • 1/2 tsp salt

Instructions

  1. Grind the jasmine tea leaves in a spice grinder or mortar & pestle until a fine powder forms, leaving a few bits of leaf intact.
  2. Blend the butter and jasmine tea powder together with a rubber spatula and let the mixture sit at room temperature overnight.
  3. Preheat the oven to 350 °F (175 °C) and line a baking sheet with parchment paper.
  4. Combine the butter mixture with the vanilla extract and powdered sugar in a large bowl using a rubber spatula or a stand mixer fitted with a paddle attachment.
  5. Add the flour and salt, mixing until a soft dough forms.
  6. On a lightly floured surface, roll out the dough to a thickness of 1/4‑inch to 1/3‑inch (0.75 cm).
  7. Cut out cookies with a 2‑inch (5 cm) rectangle or round cutter, or any shape you prefer.
  8. Transfer the cookies to the prepared baking sheet and bake for 10‑14 minutes, until the edges just begin to turn golden brown.
