Ube White Chocolate Cookies

- 1 1/2 cups all-purpose flour
- 2 tbsp ube powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup white chocolate chunks
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, ube powder, baking powder, and salt.
- In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract to the butter mixture and beat until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined; do not overmix.
- Fold in the white chocolate chunks until evenly distributed.
- Chill the dough in the refrigerator for 15-20 minutes to firm up.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
- Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a dairy-free version, substitute vegan butter and dairy-free white chocolate. Store in an airtight container at room temperature for up to 3 days.
