Grilled Pesto Chicken with Mozzarella and Tomato Garlic Sauce

Flavorful and healthy take on a grilled chicken caprese dish.

  • 4 boneless, skinless chicken breasts
  • 1/2 cups basil pesto
  • 8 oz fresh mozzarella, sliced
  • 2 tbsp olive oil
  • 2 cups cherry tomatoes, halved
  • 1 tbsp garlic
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper

Instructions

  1. Slice the chicken breasts thin and pound to an even thickness.
  2. Place the chicken in a shallow dish and coat with pesto; let it marinate for 20 minutes up to 4 hours.
  3. Preheat a grill or grill pan to medium‑high heat.
  4. Grill the chicken 4‑5 minutes per side, adding mozzarella slices on top during the last 2 minutes to melt.
  5. While the chicken grills, heat olive oil in a skillet over medium heat.
  6. Add the halved tomatoes and sauté for 5 minutes until they begin to soften.
  7. Season the tomato mixture with garlic, salt, and pepper, stirring for another minute.
  8. Transfer the tomato sauce onto each piece of grilled chicken.
  9. Garnish with fresh basil leaves, if desired, and serve immediately.
