Grilled Pesto Chicken with Mozzarella and Tomato Garlic Sauce

- 4 boneless, skinless chicken breasts
- 1/2 cups basil pesto
- 8 oz fresh mozzarella, sliced
- 2 tbsp olive oil
- 2 cups cherry tomatoes, halved
- 1 tbsp garlic
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
Instructions
- Slice the chicken breasts thin and pound to an even thickness.
- Place the chicken in a shallow dish and coat with pesto; let it marinate for 20 minutes up to 4 hours.
- Preheat a grill or grill pan to medium‑high heat.
- Grill the chicken 4‑5 minutes per side, adding mozzarella slices on top during the last 2 minutes to melt.
- While the chicken grills, heat olive oil in a skillet over medium heat.
- Add the halved tomatoes and sauté for 5 minutes until they begin to soften.
- Season the tomato mixture with garlic, salt, and pepper, stirring for another minute.
- Transfer the tomato sauce onto each piece of grilled chicken.
- Garnish with fresh basil leaves, if desired, and serve immediately.
