French Onion Meatloaf with Gruyère Cheese

A savory meatloaf inspired by French onion soup, featuring caramelized onions mixed into the beef and topped with melted Gruyère cheese.

Ingredients

Caramelized Onions

  • 2 yellow onions
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp sugar
  • 0.5 cups beef broth

Meatloaf

  • 1.5 lb ground beef
  • 2 eggs
  • 0.75 cups breadcrumbs
  • 0.5 cups milk
  • 2 garlic
  • 1 tbsp worcestershire sauce
  • 1 tsp dried thyme
  • 0.5 tsp black pepper
  • 0.5 tsp salt

Topping

  • 1.5 cups gruyère cheese
  • fresh parsley

Instructions

  1. Caramelize the Onions: Heat butter and olive oil in a skillet over medium heat. Add onions and salt. Cook 20–25 minutes, stirring often, until deeply golden and soft. Stir in sugar (if using), then add beef broth and simmer 5 minutes until slightly saucy. Remove from heat and let cool slightly.
  2. Prepare the Meatloaf: Preheat oven to 375°F (190°C). In a large bowl, mix eggs, milk, breadcrumbs, garlic, Worcestershire sauce, thyme, pepper, and salt. Add ground beef and half of the caramelized onions. Mix gently until just combined (do not overmix).
  3. Bake: Shape mixture into a loaf and place in a greased loaf pan or casserole dish. Spoon remaining onions and their juices over the top. Bake uncovered for 45 minutes.
  4. Add Cheese: Remove from oven and top with Gruyère cheese. Return to oven and bake 10–15 minutes, until cheese is melted and bubbly.
  5. Rest & Serve: Let meatloaf rest 10 minutes before slicing. Garnish with fresh parsley and serve hot.
