  • 1 lb salmon fillet
  • 2 cups sushi rice
  • 2 tbsp avocado oil
  • 4 tbsp mayonnaise
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 nori sheets
  • 2 green onions, chopped
  • 1 tbsp sesame seeds
  • 1 tsp sriracha (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the sushi rice according to the package directions, then stir in the rice vinegar and set aside.
  3. Spread the cooked rice evenly in a 9‑x‑13‑inch baking dish.
  4. Place the salmon fillet on top of the rice and break it into bite‑size pieces.
  5. In a small bowl whisk together avocado oil, mayonnaise, soy sauce, sesame oil, and optional sriracha to form a creamy sauce.
  6. Drizzle the sauce over the salmon and rice, spreading it evenly.
  7. Sprinkle sesame seeds and chopped green onions over the top.
  8. Bake for 15‑20 minutes, or until the salmon is cooked through and the edges are lightly golden.
  9. Remove from the oven, let cool slightly, and serve with nori sheets on the side if desired.
