- 1 lb salmon fillet
- 2 cups sushi rice
- 2 tbsp avocado oil
- 4 tbsp mayonnaise
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 2 nori sheets
- 2 green onions, chopped
- 1 tbsp sesame seeds
- 1 tsp sriracha (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the sushi rice according to the package directions, then stir in the rice vinegar and set aside.
- Spread the cooked rice evenly in a 9‑x‑13‑inch baking dish.
- Place the salmon fillet on top of the rice and break it into bite‑size pieces.
- In a small bowl whisk together avocado oil, mayonnaise, soy sauce, sesame oil, and optional sriracha to form a creamy sauce.
- Drizzle the sauce over the salmon and rice, spreading it evenly.
- Sprinkle sesame seeds and chopped green onions over the top.
- Bake for 15‑20 minutes, or until the salmon is cooked through and the edges are lightly golden.
- Remove from the oven, let cool slightly, and serve with nori sheets on the side if desired.
