Honey Soy Blistered Shishito Peppers
These blistered shishito peppers are a simple, addictive appetizer featuring a savory-sweet glaze and a nutty sesame finish.

- 8 oz shishito peppers
- 1 tbsp neutral oil (grapeseed or avocado)
- 2 tbsp soy sauce
- 1.5 tbsp honey
- 1 tsp rice vinegar
- 1 tsp toasted sesame seeds
- tsp sesame oil
Instructions
- Wash and thoroughly dry the shishito peppers to ensure they blister properly rather than steam.
- Heat a large cast-iron or stainless steel skillet over high heat until smoking hot.
- Add the oil to the pan and swirl to coat.
- Place the peppers in the pan in a single layer, working in batches if necessary.
- Sear the peppers undisturbed for 2-3 minutes until they develop dark, charred blisters.
- Flip the peppers and cook for another 2 minutes until softened and charred on the other side.
- Whisk together the soy sauce, honey, and rice vinegar in a small bowl while the peppers cook.
- Pour the sauce mixture directly into the hot pan with the peppers.
- Toss quickly for 30 seconds until the sauce reduces into a sticky glaze that coats the peppers.
- Remove from heat immediately and transfer to a serving bowl.
- Sprinkle with toasted sesame seeds and serve warm.
Notes
Use a very hot pan to get that signature char without overcooking the peppers. Be careful when adding the sauce, as it will steam and bubble rapidly upon contact with the hot pan.
