Inspired by Miss Ada in Fort Greene. This luxurious whipped ricotta blend, infused with nutty brown butter and aromatic sage, creates a delightful balance of flavors while honey adds a touch of sweetness.

  • 2 cups ricotta cheese
  • 4 tbsp unsalted butter
  • 3 tbsp honey
  • 10 g fresh sage leaves
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 loaf crusty bread or crackers

Instructions

  1. Melt butter in a skillet over medium heat; continue cooking until it turns golden brown and becomes fragrant, about 5-7 minutes.
  2. Remove the skillet from the heat and add chopped sage leaves; stir to infuse the sage flavor into the butter.
  3. In a food processor, combine ricotta cheese, a drizzle of honey, salt, and pepper.
  4. Pour in the brown butter and sage mixture, ensuring to scrape all the brown bits from the skillet.
  5. Blend the mixture until smooth and creamy, adjusting seasoning to taste.
  6. Transfer whipped ricotta to a serving dish and drizzle with additional honey and leftover brown butter.
  7. Garnish with fresh sage leaves for presentation.
  8. Serve with crusty bread or crackers for dipping.
