Quick Asian Chicken Stir-Fry

- 3 tbsp soy sauce
- 1 tbsp fresh ginger
- 3 cloves garlic
- 2 medium bell peppers
- 2 cups broccoli
- 1 tbsp sesame oil

- 1 tsp cornstarch
- 2 tbsp vegetable oil
- 1 tbsp rice vinegar
- 1 tsp honey
- 1 medium carrot
Instructions
- Cut 1 lb boneless skinless chicken breasts into bite-sized pieces and toss with 1 tsp cornstarch in a bowl.
- Mince 3 garlic cloves and grate 1 tbsp fresh ginger.
- Slice 2 bell peppers into strips, cut 2 cups broccoli into florets, slice 1 carrot into thin rounds, and chop 2 green onions.
- Whisk together 3 tbsp soy sauce, 1 tbsp sesame oil, 1 tbsp rice vinegar, 1 tsp honey, the minced garlic, and grated ginger in a small bowl to make the sauce.
- Heat 2 tbsp vegetable oil in a large wok or skillet over medium-high heat.
- Add the chicken pieces and stir-fry for 4-5 minutes until browned and cooked through, then remove to a plate.
- Add the broccoli, bell peppers, and carrots to the wok and stir-fry for 3-4 minutes until crisp-tender.
- Return the chicken to the wok, pour in the sauce, and stir-fry for 2 minutes until everything is coated and heated through.
- Remove from heat and stir in the chopped green onions.
- Serve immediately over steamed rice.
