Tender boneless skinless chicken breasts are quickly stir-fried with crisp vegetables in a flavorful soy-ginger sauce, perfect for a busy weeknight meal ready in under 30 minutes.

  • 1 lb boneless skinless chicken breasts
  • 3 tbsp soy sauce
  • 1 tbsp fresh ginger
  • 3 cloves garlic
  • 2 medium bell peppers
  • 2 cups broccoli
  • 1 tbsp sesame oil
  • 2 green onions
  • 1 tsp cornstarch
  • 2 tbsp vegetable oil
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 medium carrot

Instructions

  1. Cut 1 lb boneless skinless chicken breasts into bite-sized pieces and toss with 1 tsp cornstarch in a bowl.
  2. Mince 3 garlic cloves and grate 1 tbsp fresh ginger.
  3. Slice 2 bell peppers into strips, cut 2 cups broccoli into florets, slice 1 carrot into thin rounds, and chop 2 green onions.
  4. Whisk together 3 tbsp soy sauce, 1 tbsp sesame oil, 1 tbsp rice vinegar, 1 tsp honey, the minced garlic, and grated ginger in a small bowl to make the sauce.
  5. Heat 2 tbsp vegetable oil in a large wok or skillet over medium-high heat.
  6. Add the chicken pieces and stir-fry for 4-5 minutes until browned and cooked through, then remove to a plate.
  7. Add the broccoli, bell peppers, and carrots to the wok and stir-fry for 3-4 minutes until crisp-tender.
  8. Return the chicken to the wok, pour in the sauce, and stir-fry for 2 minutes until everything is coated and heated through.
  9. Remove from heat and stir in the chopped green onions.
  10. Serve immediately over steamed rice.
