Cottage Cheese Buns with Healthy Marzipan

Soft, fluffy buns made with blended cottage cheese for a protein-packed base, filled with a homemade healthy marzipan made from almond flour and honey, then baked until golden and dusted with icing sugar.

Ingredients

Buns

  • 2 dl cottage cheese
  • 1 egg
  • 2 dl flour
  • 1 tbsp butter
  • 1-2 tbsp honey
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • pinch salt

Healthy Marzipan

  • 2 dl almond flour
  • 2-3 tbsp honey
  • 1 tbsp butter
  • 1 tsp almond extract
  • pinch salt
  • 2 tbsp milk
  • sliced almonds

Instructions

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. For the buns: In a blender or food processor, blend 2 dl cottage cheese until smooth. In a mixing bowl, combine the blended cottage cheese, 1 egg, 2 dl flour, 1 tbsp melted butter, 1-2 tbsp honey, 1 tsp baking powder, 1 tsp vanilla extract, and a pinch of salt. Mix until a slightly sticky dough forms.
  3. For the healthy marzipan: In a separate bowl, mix 2 dl almond flour, 2-3 tbsp honey, 1 tbsp melted butter, 1 tsp almond extract, a pinch of salt, and 2 tbsp milk until it comes together into a thick paste. If too dry, add a splash more milk.
  4. Divide the bun dough into 4 equal portions. On a lightly floured surface, flatten each portion into a disc. Place a tablespoon-sized ball of marzipan in the center of each disc, then fold and seal the dough around the filling to form a bun shape. Gently roll to smooth and place seam-side down on the baking sheet.
  5. Sprinkle the top of each bun with sliced almonds, pressing lightly to adhere.
  6. Bake in the preheated oven for 15-17 minutes, or until the buns are golden and firm to the touch.
  7. Remove from the oven and let cool slightly on a wire rack. Dust with icing sugar before serving.

Notes

The dough will be sticky, so use floured hands or a spoon to shape the buns. For a dairy-free version, substitute the cottage cheese with a plant-based alternative and use coconut oil instead of butter.
