Arugula Salad with Lemon Dijon Dressing
A fresh, versatile arugula salad topped with toasted pine nuts and parmesan, dressed in a zesty lemon Dijon vinaigrette. Perfect as a side for chicken, steak, or pasta.
Ingredients
Salad
- 16 oz arugula
- 1 yellow onion
- 1 english cucumber
- 1.5 cups toasted pine nuts
- 1.5 cups shredded parmesan
Dressing
- 30 g dijon mustard
- 2 garlic, grated
- 1 lemon juice
- 30 g white wine vinegar
- 300 g olive oil
- salt, pepper, and garlic powder
Instructions
- In a large bowl, combine the arugula, thinly sliced yellow onion, sliced English cucumber, toasted pine nuts, and shredded parmesan.
- For the dressing, in a small bowl, whisk together the Dijon mustard, grated garlic, lemon juice, white wine vinegar, olive oil, salt, pepper, and garlic powder until emulsified.
- Drizzle the dressing over the salad and toss to combine. Add optional toppings like tomatoes, red peppers, or chickpeas before serving.
