Sauté sliced andouille sausage with potatoes and kale in a single skillet for a quick, smoky, and satisfying main course that's perfect for weeknights. The bold flavors come together effortlessly with minimal cleanup.

  • 1 lb andouille sausage, sliced
  • 4 medium potatoes
  • 4 cups kale
  • 1 medium onion
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/2 cup chicken stock

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Add 1 pound of sliced andouille sausage to the skillet and cook for 4-5 minutes until browned and crispy on the edges.
  3. Stir in 1 diced onion and 3 minced garlic cloves, cooking for 2-3 minutes until softened and fragrant.
  4. Add 4 medium diced potatoes to the skillet and season with 1 teaspoon paprika, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon cayenne pepper for extra spice; cook for 5 minutes, stirring occasionally.
  5. Pour in 1/2 cup chicken stock to deglaze the pan, scraping up any browned bits from the bottom.
  6. Cover the skillet and simmer for 10-12 minutes, stirring occasionally, until the potatoes are tender.
  7. Stir in 4 cups chopped kale and cook uncovered for 2-3 minutes until wilted and tender.
  8. Taste and adjust seasoning with additional salt and pepper if needed, then serve hot.
