- 1/2 cup chicken stock
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add 1 pound of sliced andouille sausage to the skillet and cook for 4-5 minutes until browned and crispy on the edges.
- Stir in 1 diced onion and 3 minced garlic cloves, cooking for 2-3 minutes until softened and fragrant.
- Add 4 medium diced potatoes to the skillet and season with 1 teaspoon paprika, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon cayenne pepper for extra spice; cook for 5 minutes, stirring occasionally.
- Pour in 1/2 cup chicken stock to deglaze the pan, scraping up any browned bits from the bottom.
- Cover the skillet and simmer for 10-12 minutes, stirring occasionally, until the potatoes are tender.
- Stir in 4 cups chopped kale and cook uncovered for 2-3 minutes until wilted and tender.
- Taste and adjust seasoning with additional salt and pepper if needed, then serve hot.
