This no-bake treat combines the natural sweetness of Medjool dates with creamy peanut butter, rich dark chocolate, crunchy pistachios, and a touch of sea salt for a satisfying, healthy dessert.

  • 12 whole medjool dates
  • 1/2 cup peanut butter
  • 8 oz dark chocolate
  • 1/4 cup pistachios
  • 1 pinch sea salt

Instructions

  1. Line a small baking sheet with parchment paper and set aside.
  2. Pit 12 Medjool dates by slicing them lengthwise and removing the pits, then arrange them cut-side up on the prepared sheet in two rows of six, pressing them together to form a bark base.
  3. Spread 1/2 cup peanut butter evenly over the dates, filling any gaps.
  4. Melt 8 ounces dark chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  5. Pour the melted chocolate over the peanut butter layer, spreading it evenly with a spatula to cover completely.
  6. Sprinkle 1/4 cup chopped pistachios and a pinch of sea salt over the chocolate.
  7. Freeze for 1-2 hours until firm.
  8. Remove from the freezer and break into bark-sized pieces to serve.
