This hearty pumpkin bread is packed with warm spices and tender crumb, perfect for fall baking or anytime snacking. It's easy to make and stays moist for days.

  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup canned pumpkin puree
  • 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk together 1 3/4 cups flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 1/2 teaspoon salt, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, and 1/4 teaspoon cloves.
  3. In a separate bowl, beat 1 cup granulated sugar and 1/2 cup brown sugar with 1/2 cup vegetable oil until well combined.
  4. Add 2 large eggs one at a time, beating after each addition, then mix in 1 teaspoon vanilla extract.
  5. Stir in 1 cup canned pumpkin puree until smooth.
  6. Gradually add the dry ingredients to the wet mixture, stirring just until combined; do not overmix.
  7. Fold in 1/2 cup chopped walnuts or pecans if desired.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
