Creamy Garlic Chicken Rice Skillet

Sliced chicken breasts cooked in a creamy garlic sauce and mixed with long-grain white rice for an easy, indulgent one-pan dish that brings cozy flavors to your weeknight table in about 30 minutes.

Ingredients

  • 1 lb boneless chicken breasts
  • 1 cup long-grain white rice
  • 1 cup heavy cream
  • 4 garlic cloves
  • 1/2 cup parmesan cheese
  • 2 cups chicken broth
  • 2 cups fresh spinach
  • 2 tbsp butter
  • 1 medium onion
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Instructions

  1. Season the sliced chicken breasts with salt and black pepper.
  2. Heat the butter in a large skillet over medium-high heat.
  3. Add the chicken to the skillet and cook for 4-5 minutes until browned on both sides; remove and set aside.
  4. In the same skillet, add the diced onion and minced garlic; sauté for 2 minutes until fragrant.
  5. Stir in the long-grain white rice and cook for 1 minute to toast.
  6. Pour in the chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes until rice is mostly tender.
  7. Stir in the heavy cream, parmesan cheese, and cooked chicken; simmer uncovered for 5 minutes until sauce thickens.
  8. Add the spinach and stir until wilted, about 1-2 minutes.
  9. Taste and adjust seasoning with additional salt and pepper if needed.
  10. Remove from heat and let rest for 2 minutes before serving.
