Creamy Garlic Chicken Rice Skillet
Sliced chicken breasts cooked in a creamy garlic sauce and mixed with long-grain white rice for an easy, indulgent one-pan dish that brings cozy flavors to your weeknight table in about 30 minutes.
Ingredients
- 1 lb boneless chicken breasts
- 1 cup long-grain white rice
- 1 cup heavy cream
- 4 garlic cloves
- 1/2 cup parmesan cheese
- 2 cups chicken broth
- 2 cups fresh spinach
- 2 tbsp butter
- 1 medium onion
- 1/2 tsp black pepper
- 1/2 tsp salt
Instructions
- Season the sliced chicken breasts with salt and black pepper.
- Heat the butter in a large skillet over medium-high heat.
- Add the chicken to the skillet and cook for 4-5 minutes until browned on both sides; remove and set aside.
- In the same skillet, add the diced onion and minced garlic; sauté for 2 minutes until fragrant.
- Stir in the long-grain white rice and cook for 1 minute to toast.
- Pour in the chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes until rice is mostly tender.
- Stir in the heavy cream, parmesan cheese, and cooked chicken; simmer uncovered for 5 minutes until sauce thickens.
- Add the spinach and stir until wilted, about 1-2 minutes.
- Taste and adjust seasoning with additional salt and pepper if needed.
- Remove from heat and let rest for 2 minutes before serving.
