- 1 lb chicken breasts
- 2 tsp kosher salt
- 1 cup flour
- 2 eggs
- 2 cups panko bread crumbs
- 0.25 cup sesame seeds
- 1 tsp garlic powder
- 0.5 tsp pepper
- as needed avocado oil
Instructions
- Butterfly each chicken breast and pound between plastic wrap to 1/4-inch thickness.
- Season both sides with kosher salt; refrigerate 30 minutes.
- Set up breading stations on plates: 1) flour; 2) beaten eggs with dash of salt; 3) panko mixed with sesame seeds, garlic powder, salt, and pepper.
- Heat avocado oil in cast iron skillet on the stove to 350°F for shallow frying.
- Dredge each piece in flour, shake off excess; dip in egg; coat in panko mixture, pressing to adhere. Place on baking sheet.
- Fry each piece 2-3 minutes per side until golden brown.
- Drain on wire rack.
