Half with walnuts, half without for Benny. Added some vanilla ice cream and sea salt for fun.
Healthier Chocolate Chip Banana Bread
This healthier take on classic banana bread uses whole wheat flour, natural sweeteners like maple syrup, and plain Greek yogurt in place of butter for a moist, nutrient-packed loaf. Enhanced with cinnamon for warmth and chocolate chips for indulgent flavor, it's perfect for breakfast or snacking.
Ingredients
Ingredients
- 3 medium ripe bananas
- 1/3 cup plain greek yogurt
- 1/4 cup maple syrup
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups whole wheat flour
- 1/2 cup all-purpose flour
- 1 tsp ground cinnamon
- 1/2 cup (optional) chopped walnuts or pecans
- 1/2 cup (optional) semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with cooking spray.
- In a large bowl, mash 3 ripe bananas until smooth.
- Stir in 1/3 cup plain Greek yogurt, 1/4 cup maple syrup, 2 large eggs, 1 teaspoon vanilla extract, and 1/2 teaspoon each of baking soda and salt until well combined.
- In a separate bowl, whisk together 1 1/2 cups whole wheat flour, 1/2 cup all-purpose flour (or use all whole wheat for extra health benefits), and 1 teaspoon ground cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined; fold in 1/2 cup chopped walnuts or pecans and 1/2 cup semi-sweet chocolate chips if desired.
- Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
