- 4 pieces boneless skinless chicken breasts
- 2 tbsp cajun seasoning
- 2 tbsp olive oil
- 2 medium bell peppers, sliced
- 1 medium onion, sliced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 for serving lemon wedges
Instructions
- Pat the chicken dry and season both sides generously with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F).
- While cooking, add sliced bell peppers and onion to the skillet in the last 3 minutes, stirring occasionally.
- Remove from heat, let rest for 2 minutes, then slice and serve with lemon wedges if desired.
