Quick Cajun Chicken

A spicy, flavorful Cajun-spiced chicken skillet that's ready in under 30 minutes, perfect for busy weeknights.

  • 4 pieces boneless skinless chicken breasts
  • 2 tbsp cajun seasoning
  • 2 tbsp olive oil
  • 2 medium bell peppers, sliced
  • 1 medium onion, sliced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 for serving lemon wedges

Instructions

  1. Pat the chicken dry and season both sides generously with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken breasts to the skillet and cook for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F).
  4. While cooking, add sliced bell peppers and onion to the skillet in the last 3 minutes, stirring occasionally.
  5. Remove from heat, let rest for 2 minutes, then slice and serve with lemon wedges if desired.
