Creamy Chocolate Protein Overnight Oats

A high-protein, nutrient-dense breakfast made by blending cottage cheese with oats, seeds, and cocoa for a creamy, pudding-like consistency.

Ingredients

Base Ingredients

  • 2 cups quick oats
  • 1/2 cups hemp hearts
  • 1/4 cups chia seeds
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 2 cups cottage cheese
  • 1/3 cups peanut butter
  • 2 cups milk of choice
  • 1/3 cups maple syrup
  • 1/4 cups cocoa powder

Instructions

  1. Combine the quick oats, hemp hearts, chia seeds, vanilla extract, cinnamon, cottage cheese, peanut butter, milk, and maple syrup in a high-speed blender.
  2. Add cocoa powder to the blender mixture to achieve the chocolate flavor seen in the recipe.
  3. Blend on high until the mixture is completely smooth and creamy.
  4. Pour the blended mixture into individual glass jars or airtight containers.
  5. Refrigerate for at least 4 hours or overnight to allow the oats and seeds to absorb the liquid and thicken.
  6. Serve chilled, optionally topped with extra peanut butter or fresh berries.

Notes

For the smoothest texture, ensure you use a high-speed blender to fully break down the cottage cheese curds. If you prefer a thicker consistency, you can reduce the amount of milk slightly.
