Banana Chocolate Chip Muffins

Moist banana muffins with chocolate chips. Tastes just like banana bread.

  • 1/2 cups unsalted butter
  • 2/3 cups granulated sugar
  • 2 large eggs
  • 3 medium bananas (1 cup mashed)
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350°F and line a 12-count muffin tin with paper liners.
  2. In a mixing bowl, cream together the softened butter and sugar.
  3. Add the eggs and beat lightly.
  4. Stir in the mashed bananas and vanilla extract until blended.
  5. In a separate bowl, whisk the flour, baking soda, and salt.
  6. Fold the dry ingredients into the wet mixture until just incorporated.
  7. Fold in 3/4 cup of the chocolate chips.
  8. Divide the batter evenly among the 12 muffin cups and sprinkle the remaining chocolate chips on top.
  9. Bake for 25-30 minutes, or until tops are golden and a toothpick comes out clean.
  10. Cool in the pan for 5 minutes, then transfer to a rack to cool completely.
