Banana Chocolate Chip Muffins
Moist banana muffins with chocolate chips. Tastes just like banana bread.

- 1/2 cups unsalted butter
- 2/3 cups granulated sugar
- 2 large eggs
- 3 medium bananas (1 cup mashed)
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup semisweet chocolate chips
Instructions
- Preheat oven to 350°F and line a 12-count muffin tin with paper liners.
- In a mixing bowl, cream together the softened butter and sugar.
- Add the eggs and beat lightly.
- Stir in the mashed bananas and vanilla extract until blended.
- In a separate bowl, whisk the flour, baking soda, and salt.
- Fold the dry ingredients into the wet mixture until just incorporated.
- Fold in 3/4 cup of the chocolate chips.
- Divide the batter evenly among the 12 muffin cups and sprinkle the remaining chocolate chips on top.
- Bake for 25-30 minutes, or until tops are golden and a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a rack to cool completely.
