Orange & Almond Granola (amelia.f's version)
A crunchy, orange‑flavored granola with almonds and raisins.

- 2 tsp orange zest
- 2 tbsp coconut sugar
- 4 cups old-fashioned rolled oats
- 1.5 cups raw almonds
- 1 tsp fine sea salt
- 1 tsp ground cinnamon
- 0.5 cups extra-virgin olive oil or melted coconut oil
- 0.5 cups honey or maple syrup
- 1 tbsp vanilla extract
- 0.75 cups raisins
Instructions
- Preheat the oven to 350 °F and line a large, rimmed baking sheet with parchment paper.
- In a small bowl, combine the orange zest and coconut sugar, rubbing the zest into the sugar until bright orange and fragrant.
- In a large mixing bowl, combine the oats, almonds, salt, cinnamon, and orange‑sugar mixture; stir to combine.
- Pour in the olive oil, honey, and vanilla extract, and mix well.
- Spread the granola onto the prepared baking sheet in an even layer and bake for 19–23 minutes, stirring halfway, until lightly golden.
- Allow the granola to cool, then stir in the raisins and break into chunks as needed.
- Store the granola in an airtight container at room temperature for 1–2 weeks, or freeze for longer storage.
