Ingredients

Beef Mixture

  • 2 lb flank steak
  • 1 tsp baking soda
  • 1 tbsp corn starch
  • 2 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce

Sauce

  • 5 garlic, minced
  • 2 tbsp ginger paste
  • 1/4 cups dark soy sauce
  • 1/3 cups soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp rice vinegar
  • 2 tsp sugar
  • 1 tsp msg
  • 1/2 cups water
  • 2 tbsp corn starch
  • 1 tbsp sesame oil

Vegetable

  • 8-12 oz broccoli, blanched

Instructions

  1. Slice flank steak thinly against the grain and place in a bowl.
  2. In a small bowl, mix together baking soda, corn starch, oyster sauce, soy sauce, and dark soy sauce. Add to the beef and toss to coat. Let marinate for 15 minutes.
  3. Prepare the sauce: In a separate bowl, whisk together garlic, ginger paste, dark soy sauce, soy sauce, oyster sauce, rice vinegar, sugar, MSG, water, corn starch, and sesame oil. Set aside.
  4. Heat a wok or large skillet over high heat. Add a tablespoon of oil and swirl to coat.
  5. Add marinated beef in a single layer and sear for 1-2 minutes per side until browned. Remove and set aside.
  6. Blanch broccoli in boiling water for 1-2 minutes, then shock in ice water to retain color and crispness.
  7. Reheat wok, add a bit more oil if needed, and stir-fry broccoli for 1 minute.
  8. Return beef to the wok, pour in sauce, and stir until sauce thickens and coats ingredients evenly, about 2-3 minutes.
  9. Serve hot over steamed rice.
