Beef and Broccoli

Ingredients
Beef Mixture
- 2 lb flank steak
- 1 tsp baking soda
- 1 tbsp corn starch
- 2 tbsp oyster sauce
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce
Sauce
- 5 garlic, minced
- 2 tbsp ginger paste
- 1/4 cups dark soy sauce
- 1/3 cups soy sauce
- 2 tbsp oyster sauce
- 2 tbsp rice vinegar
- 2 tsp sugar
- 1 tsp msg
- 1/2 cups water
- 2 tbsp corn starch
- 1 tbsp sesame oil
Vegetable
- 8-12 oz broccoli, blanched
Instructions
- Slice flank steak thinly against the grain and place in a bowl.
- In a small bowl, mix together baking soda, corn starch, oyster sauce, soy sauce, and dark soy sauce. Add to the beef and toss to coat. Let marinate for 15 minutes.
- Prepare the sauce: In a separate bowl, whisk together garlic, ginger paste, dark soy sauce, soy sauce, oyster sauce, rice vinegar, sugar, MSG, water, corn starch, and sesame oil. Set aside.
- Heat a wok or large skillet over high heat. Add a tablespoon of oil and swirl to coat.
- Add marinated beef in a single layer and sear for 1-2 minutes per side until browned. Remove and set aside.
- Blanch broccoli in boiling water for 1-2 minutes, then shock in ice water to retain color and crispness.
- Reheat wok, add a bit more oil if needed, and stir-fry broccoli for 1 minute.
- Return beef to the wok, pour in sauce, and stir until sauce thickens and coats ingredients evenly, about 2-3 minutes.
- Serve hot over steamed rice.
