Ingredients
Ingredients
- 1 cups greek yoghurt
- 1 large egg
- 2 tbsp milk
- 1 tsp vanilla extract
- 1 tbsp maple syrup
- 1 cups plain flour
- 2 tsp baking powder
- 1/4 tsp bicarbonate of soda
- 1/4 tsp salt
Instructions
- Mix the Greek yoghurt, milk, vanilla and maple syrup in a bowl.
- In a separate bowl, combine the flour, baking powder, bicarbonate of soda and salt.
- Add the wet ingredients to the dry ingredients, then add the egg. Gently mix until just combined, don’t overmix!
- Let the batter rest for 10 minutes.
- Heat a lightly greased non-stick pan over medium-low heat. Add about ¼ cup of batter per pancake.
- Cover the pan with a lid while the pancake cooks. This helps the heat circulate and cooks the middle properly while keeping the pancake nice and fluffy.
- Once bubbles appear and the edges look set, flip and cook for another 1–2 minutes until golden.
- Caramelise your banana slices in a little butter and maple syrup.
- Stack your pancakes, top with the caramelised bananas and finish with a little square of butter so it melts over everything, and then maple syrup.
