Microwave Sticky Toffee Pudding

- 3 tbsp dark brown sugar
- 3 tbsp heavy cream

- ¼ tsp baking soda
- ¼ cups all-purpose flour
- ⅛ tsp ground cinnamon
- sour cream, vanilla ice cream or whipped cream, for serving
Instructions
- Microwave 1 tablespoon of butter, 2 tablespoons of brown sugar, 1 tablespoon of cream, and a pinch of salt in 30‑second intervals until melted and smooth; set aside to thicken.
- In a 12‑ounce microwave‑safe bowl, heat the dates with the remaining butter, cream, and baking soda for 30–60 seconds, then mash into a paste; stir in the flour, remaining sugar, cinnamon, and salt until just combined.
- Microwave the batter for 45–60 seconds until the top is set.
- Serve warm topped with the prepared caramel sauce and a dollop of ice cream or whipped cream.
