High Protein Street Corn Taco Sweet Potatoes
These flavorful stuffed sweet potatoes combine savory seasoned ground meat with a creamy, zesty street corn topping for a perfect easy dinner or meal prep.

- 4 count medium sweet potatoes
- 1.5 lb ground beef or turkey
- 3 cups corn (fresh, canned, or frozen)
- 0.5 cups plain greek yogurt
- 2 tbsp mayo
- 1 count lime juice
- 1 count diced avocado
- 0.25 cups cotija cheese
- 1 handful fresh cilantro
- 1 packet taco seasoning
- to taste null oil, salt, pepper, garlic powder, onion powder, chili powder
Instructions
- Preheat your oven to 375°F.
- Cut the sweet potatoes in half lengthwise and season with oil, salt, pepper, garlic powder, and onion powder.
- Place the sweet potatoes face down on a baking sheet and bake for 45–60 minutes until tender.
- Brown the ground beef or turkey in a skillet over medium-high heat and stir in the taco seasoning.
- Combine the corn, Greek yogurt, mayo, lime juice, cotija cheese, cilantro, and a pinch of chili powder, garlic powder, and salt in a bowl.
- Assemble by mashing the center of the baked sweet potatoes, adding the seasoned meat, topping with the street corn mixture, and finishing with extra cotija, cilantro, avocado, and a squeeze of lime.
Notes
Use a high-quality taco seasoning to enhance the flavor of the meat. If prepping for the week, store the street corn mixture separately from the potatoes and meat to keep it fresh.
