Lemon Garlic Chicken Breasts

- 2 whole lemons
- 4 cloves garlic cloves
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup fresh parsley
Instructions
- Preheat a large skillet over medium-high heat.
- Pound the chicken breasts to an even 1/2-inch thickness using a meat mallet.
- Season both sides of the chicken breasts with salt and black pepper.
- Drizzle 1 tablespoon of olive oil into the hot skillet.
- Add the chicken breasts to the skillet and sear for 4-5 minutes per side until golden and cooked through to 165°F internally.
- Remove the chicken to a plate and tent with foil to keep warm.
- In the same skillet, add the remaining 1 tablespoon of olive oil over medium heat.
- Mince the garlic cloves and add them to the skillet, sautéing for 1 minute until fragrant.
- Zest and juice the lemons, then stir in the lemon zest, juice, and chopped parsley.
- Simmer the sauce for 2 minutes to reduce slightly.
- Return the chicken breasts to the skillet, spooning the sauce over them.
- Cook for 1-2 more minutes to coat the chicken in the sauce.
- Remove from heat and let rest for 2 minutes before serving.
