Lemon Garlic Chicken Breasts

Tender boneless skinless chicken breasts are quickly seared in a zesty lemon-garlic sauce, making an elegant yet effortless main for your dinner party. Serve with steamed asparagus and rice for a complete meal in under 30 minutes.

  • 1 1/2 lb boneless skinless chicken breasts
  • 2 whole lemons
  • 4 cloves garlic cloves
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley

Instructions

  1. Preheat a large skillet over medium-high heat.
  2. Pound the chicken breasts to an even 1/2-inch thickness using a meat mallet.
  3. Season both sides of the chicken breasts with salt and black pepper.
  4. Drizzle 1 tablespoon of olive oil into the hot skillet.
  5. Add the chicken breasts to the skillet and sear for 4-5 minutes per side until golden and cooked through to 165°F internally.
  6. Remove the chicken to a plate and tent with foil to keep warm.
  7. In the same skillet, add the remaining 1 tablespoon of olive oil over medium heat.
  8. Mince the garlic cloves and add them to the skillet, sautéing for 1 minute until fragrant.
  9. Zest and juice the lemons, then stir in the lemon zest, juice, and chopped parsley.
  10. Simmer the sauce for 2 minutes to reduce slightly.
  11. Return the chicken breasts to the skillet, spooning the sauce over them.
  12. Cook for 1-2 more minutes to coat the chicken in the sauce.
  13. Remove from heat and let rest for 2 minutes before serving.
