Minestrone
A hearty Italian vegetable soup packed with beans, pasta, and fresh greens in a savory tomato broth.

- 2 tbsp olive oil
- 3/4 cups diced onion
- 1/2 cups diced celery
- 1/2 cups diced carrots
- 1 diced zucchini
- 2 tsp minced garlic
- 14 oz canned diced tomatoes
- 2 tsp italian seasoning
- 15 oz canned white beans
- 15 oz canned kidney beans
- 2 cups chopped spinach or kale
- 2 tbsp chopped parsley
- as needed shredded parmesan
- vegetable broth
- tomato paste
- green beans
- pasta
- to taste salt
- to taste pepper
Instructions
- Heat the olive oil in a large pot over medium high heat. Add the onion, celery, carrots and zucchini to the pot.
- Cook the vegetables for about 3-5 minutes. Add the garlic and cook for 30 seconds. Season the vegetables with salt and pepper.
- Add the tomatoes, vegetable broth, tomato paste and Italian seasoning to the pot. Bring to a simmer.
- Add the white beans, kidney beans, green beans and pasta to the pot. Simmer for 10-15 minutes or until pasta and vegetables are tender.
- Season the soup with salt and pepper to taste. Stir in the spinach or kale and cook for 2-3 minutes.
- Sprinkle the parsley and parmesan over the soup
