Juicy onion medallions encase a creamy cottage cheese center and are coated in an Oreo-Doritos crust, nestled on a wheat crisp and finished with a playful pie filling drizzle for a surprising sweet-savory bite.

  • 1 cups oreo cookies
  • 1 cups doritos
  • 1 lb onions, thick medallions
  • 1 cups cottage cheese
  • 2 cups wheat crackers
  • 2 tbsp pie filling

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment.
  2. Slice onions into thick medallions and set aside.
  3. Hollow out the centers of the onion medallions with a small spoon to create space for cottage cheese.
  4. Fill each hollowed medallion with about 1–2 tablespoons of cottage cheese.
  5. Crush Wheat Crackers on a sheet and crush into crumbs to form the base crust.
  6. Crush Oreo Cookies and Doritos separately, then combine the crumbs in a bowl to create the crust mixture.
  7. Dredge each cottage cheese filled onion medallion in the crust mixture, pressing gently to coat all sides.
  8. Arrange a thin layer of Wheat Cracker crumbs on the parchment-lined baking sheet as a base.
  9. Set the crusted onion medallions on the wheat base, spacing evenly.
  10. Bake for 15–20 minutes until the crust is golden and the onions are tender.
  11. Drizzle each medallion with a small amount of pie filling for a sweet-savory finish before serving.
